  • 1 bunch fresh dill, chopped
  • 2 tablespoons lemon juice
  • ground black pepper, to taste
  • 2 large cucumbers, sliced thickly

  1. Place a double sheet of cling film onto a work surface then place sliced salmon in a thin layer on top of cling film, layering the pieces to avoid gaps.
  2. Combine cream cheese with lemon juice, pepper and finely chopped dill in a bowl and mix well. Spread the filling on top of the salmon.
  3. Using the cling film to help you, roll up tightly into a log then wrap in cling film and chill in the fridge for at least 2 hours.
  4. Remove the salmon roll from the fridge and slice into rounds 2cm thick with a sharp knife. Arrange the cucumber rounds onto a serving platter then top with a salmon round. Serve chilled.

Step 1

In a food processor , combine the cream cheese, lemon juice and fresh dill and pepper. Pulse until fluffy and just blended. Cover and chill until ready to assemble the canapés.

Arrange the cucumber rounds on a tray so they are flat. Spoon or pipe a little of the cream cheese mixture on top. Lay a slice of smoked salmon on top decoratively, bending to fit cucumber round. Garnish with fried capers and a sprig of fresh dill. Serve immediately or refrigerate until ready to serve.

8 squares pumpernickel or wheat bread

Spread each piece of bread with 1 tablespoon of the butter mixture. Place 1 ounce of sliced salmon on half of the bread slices. Top with thinly sliced cucumber and another piece of bread.

Press firmly and cut off crust around sandwiches. Cut each whole sandwich into four squares or triangles, or with a round, crescent or star cutter, if desired.

I don’t know about you but November is the new December when it comes to Christmas parties. I put it down to people wanting to get in “early” for an end-of-year catch up.

That’s fine by me. Two of my favourite food groups are champagne and canapes. Add in chocolate and it’s a perfect night out … or in.

I’ve got a few canape recipes up my sleeve that I’ll share with you over the coming weeks. These are tried and true, simple things I whip up when I’m completely over the chips and dip scenario.

They’re also on the healthy side, which in my mind balances out the champers. What do you think?

Today’s is one of my favourites – Smoked Salmon Cucumber Canapes. I’ve been making these for about 13 years so can’t remember where I first got the inspiration and what they were actually called that in the first place. As long as you’ve got a pack of smoked salmon and a cucumber on hand, you’re just about set.

Ingredients

  • 1 Continental cucumber
  • 200g smoked salmon
  • 2 tbsp baby capers
  • Juice of one lime
  • Olive oil, to drizzle
  • Cracked black pepper
  • Sea salt

Method

  1. Cut cucumber in .5cm widths. Place on serving plate.
  2. Cut smoked salmon in strips and twist around to sit on each cucumber circle.
  3. Top with two or three baby capers.
  4. Squeeze lime juice over plate of canapés. Drizzle with olive oil. Grind pepper and salt on top.

These are also great for any time of the year Easter, Mother’s Day, or a brunch party! For something different, you can add a little dash of lemon zest and fresh dill.


Slice baguette into 5mm-thick slices. Place them on a tray and drizzle with a small amount of olive oil and season. Toast in a moderate oven for 5 minutes or until crisp and the edges have begun to turn golden. Remove and allow to cool. Cut into rounds. (These toasts can be used for a variety of other canapes and store well in an airtight container.)

Spread each toast with a little sour cream or creme fraiche. Cut slices of smoked salmon in half and twist around your finger to fit neatly on top of toast and achieve some height. Place a small dollop of sour cream on top and garnish with salmon roe. Season with white pepper and sea salt.
