Turkey Piccata with Tarragon Cream

Ingredients

  • 1 1/2 ounces pancetta or bacon, cut into 1/3-inch-wide strips
  • 4 large sprigs fresh tarragon plus 4 teaspoons chopped fresh tarragon
  • 2 teaspoons Dijon mustard
  • 2 12-ounce skinless boneless turkey breast tenderloins
  • 1 tablespoon vegetable oil

Recipe Preparation

  • Cook pancetta in medium skillet over high heat until crisp, about 2 minutes.

  • Bring cream, onion, and tarragon sprigs to boil in heavy small saucepan. Remove from heat. Cover and steep 25 minutes. Strain mixture into saucepan. Boil tarragon cream until reduced to 1/4 cup, about 4 minutes. Whisk in chopped tarragon and mustard. Season with salt and pepper. Keep warm.

  • Cut each tenderloin crosswise into 4 pieces. Using mallet, pound each piece between sheets of plastic to 1/4-inch thickness. Sprinkle with salt and pepper. Heat oil in large skillet over medium heat. Add turkey and sauté until cooked through, about 2 minutes per side. Transfer turkey to 4 plates. Spoon tarragon cream over and sprinkle with pancetta.

Season salmon fillets with salt and pepper. Pour flour in a bowl and dredge salmon, shaking off the excess.

Pour wine into the skillet and scrape browned bits from the bottom. Add garlic and cook until garlic is fragrant and slightly brown and liquid is reduced by half, about 1 minute. Add chicken broth, lemon juice, and capers. Bring to a boil while stirring. Stir in butter until melted. Return salmon fillets to skillet and spoon sauce over them.

Cook, turning fillets once, until salmon is cooked through and flakes easily with a fork, about 4 minutes. Serve salmon with sauce poured over it and garnish with lemon slices.

Chicken in white wine and tarragon cream: I really can’t remember when I first started cooking my chicken in white wine and tarragon cream. It may have been after a trip to France where I discovered that the French cook a great deal with cream and wine. All I am sure of is that it was many, many years ago! I have run many restaurants over the years and often had to come up with a dish requiring little hands-on preparation with enough flavor to have my customers coming back for more. This is how ‘chicken tarragon’ as it became known, was born.

Chicken tarragon first appeared as a daily ‘special’ that we added maybe once or twice a month. It then quickly made its way to our main menu and never left it. In fact, it remained on my menu for years, even as I moved from one restaurant to another!

This is the best testimony that I can give this dish to assure you that my chicken in white wine and tarragon cream is quick, easy, tasty and will outlive us all!


Cabernet Sauvignon

Cabernet Sauvignon is one of the more complex and layered wines out there. It has stronger tannins and a savory character which can sometimes be perceived as black pepper and tobacco. Based on these qualities, look for foods high in fat and flavors for Cabernet Sauvignon food pairing. Try Cabernet Sauvignon with grilled pork, a chicken sausage and mushroom pizza with tomato sauce or a well marbled rib-eye steak.


Chicken Piccata

Dredge the chicken breast through the seasoned flour and add to the saute pan. Do not crowd the chicken cook in batches place the lemon slices in the pan with the chicken and brown both on all sides Place on a plate in a warm oven to keep hot while cooking the rest of the chicken. Once all the chicken is cooked bring the heat up to high and add the chicken stock and deglaze the pan, and reduce the sauce by about ½ until it thickens, put chicken back in for a few moments to reheat and coat with sauce. Place on a plate, spoon sauce over top of the chicken and top with lemon slices.

Chicken with Mushtoom and Tarragon Cream Sauce is an easy to make dinner, if you have a sauté pan that can go into the oven then it’s basically a one pot meal. Just add a starch and you’re ready to go.

This recipe is good for 4 servings.

Ingredients for Chicken with Mushroom & Tarragon Cream Sauce
  • One chicken breast per person
  • 2 Tbs butter
  • 1 Tbs oil
  • Salt & pepper
  • 1 can cream of mushroom soup
  • ½ cup water
  • ½ cup Sour Cream
  • 1 onion finely chopped
  • 2 cloves of garlic finely chopped
  • 2-3 Tbsps tarragon leaves
  • Salt & pepper to taste
  • 2-3 thick slices of fresh tomato

Directions for Chicken with Mushroom & Tarragon Cream Sauce

In a sauté pan large enough to hold all the chicken in one layer, on medium heat,brown the chicken breast which have been lightly salt & peppered in 2 tablespoons of butter and one tablespoon of oil.

Once the chicken is browned remove from the pan and add the onion and garlic and cook until the onions begin to soften.

Once softened add the mushroom soup and water and stir to combine, and once fully combined and dissolved add the sour cream and stir to combine again. Add the tarragon and taste and if necessary add salt & pepper.

Put the chicken into the pan and turn to coat all sides. Place the tomato slices on top and place the pan into the center of the oven for about 30-40 minutes until the chicken is fully cooked.

Plate the chicken and serve the sauce on the side.

The BEST Poblano Cream Sauce

I first discovered the heavenly taste of poblano cream sauce at Port Fonda in Kansas City. Since I don’t live in Kansas City, I had to learn how to make the sauce at home.

Lucky for me I was able to find some recipes online that I adapted to replicate the sauce at Port Fonda.

This poblano cream sauce is smokey creamy and spicy. It isn’t so spicy that it overwhelms other flavors, it just adds a little something extra.

My first order of business once I had learned how to make poblano cream sauce was to re-create Port Fonda’s chimichangas. The chimichangas came topped with a fried egg and served in a pool of poblano cream sauce, and the extra sauce was perfect for dipping tater tots.

It was the ultimate breakfast. My recipe for chimichangas is pretty close to the original and I make it again and again.

There are endless ways to use this sauce. It might be best to just keep a jar in your fridge at all times.

This poblano cream sauce is wonderful on chimichangas, tacos, burritos, and enchiladas. You can add it to a sandwich: a grilled cheese, fried chicken, or steak sandwich are all great options. The sauce also pairs perfectly with eggs. Drizzle it over scrambled eggs or fried eggs.

I add my poblano cream sauce on top of breakfast burritos…

and I love it in this recipe for Ranch Chicken Salad Bowls. I promise if you make a jar of this poblano cream sauce you will find lots of ways to enjoy it.

If you follow this recipe exactly, the sauce with has a medium spice level. It’s about a 6 out of 10. It is really easy to customize the spice level.

To make the sauce spicier add an extra poblano pepper and reduce the amount of sour cream. To make the sauce milder, add more sour cream and/or use three peppers instead of four.

Easy Slow Cooker Chicken and Asparagus

This easy slow-cooked chicken with asparagus makes a flavorful and satisfying family meal with hot cooked rice or pasta. Add a tossed salad and biscuits or crusty bread, if you'd like.

If you can't find the condensed cream of onion soup, use cream of mushroom, cream of chicken, or cream of celery soup. Use fresh or frozen asparagus in this recipe. One reader replaced the chicken broth and cream of onion soup with a can of cream of broccoli and a can of cream of mushroom with very good results.

Feel free to adapt the recipe with the ingredients you have on hand. Chicken tenders can be used instead of the chicken breasts, or replace the chicken with cut-up turkey cutlets. A chicken and ham combination would be excellent in this dish. You can replace about 1/2 pound of the chicken with a cup of diced cooked ham.

Instead of asparagus, add 1 1/2 to 2 cups of fresh, lightly steamed broccoli florets to the dish, or add a 10-ounce package of frozen (thawed) chopped broccoli. For extra color and flavor, add some diced fresh carrots or small baby carrots and cook them along with the chicken.
