Pork roll with mushrooms

Ingredients for making pork roll with mushrooms.

  1. Champignons 200 grams
  2. Butter 50 grams
  3. Thyme 4 sprigs
  4. Almonds (flakes) 150 grams
  5. Egg 1 piece
  6. Pork tenderloin 600 grams
  7. Bulgarian pepper 2 pieces
  8. Zucchini 1 piece
  9. Onion 1 piece
  10. Red onion 1 piece
  11. 2 cloves of garlic
  12. Olive oil 2 tablespoons
  13. 1/2 parsley bunch
  14. Salt to taste
  15. Pepper to taste

Baking tray, foil, kitchen knife, cutting board, stewpan, spatula.


Step 1: stew the mushrooms.

Wash the mushrooms, peel and cut them into small slices and send them to fry in butter, stirring occasionally. Add chopped parsley and a couple of sprigs of thyme. Cook until liquid has evaporated. Add 50 grams almond flakes, salt, pepper and set aside to cool at room temperature.

Mix the cooled mushrooms thoroughly with the egg.

Step 2: roll the rolls.

Cut the meat into 4 equal parts. Beat each piece lightly so that it becomes thinner and more plastic. Then salt and pepper the meat on all sides.
Take two pieces, lay them side by side, tightly to each other, put half of the mushroom filling on them and roll the meat into a tight roll. Do the same with the remaining pieces of meat.
Put meat rolls in a foil greased with vegetable oil and wrap the edges. Each roll has a separate roll.

Step 3: chop the vegetables.

Rinse pepper, red and white onions, as well as zucchini, peel and cut into large pieces. Salt, pepper and season with olive oil. Shuffle.

Step 4: bake pork roll with mushrooms.

Put the vegetables in a deep baking sheet, and in the middle put the foil roll wrapped in foil. Here under each roll its own baking sheet, but you can take one big one, which will include both. Cook for 40 minutes.
After freeing the rolls, unfold the foil, sprinkle them on top with the remaining almond flakes and thyme.

Step 5: serve pork roll with mushrooms.

Pork roll with mushrooms is not served immediately, it must be allowed to cool for a while. After it is chopped and served with vegetables with which it was baked. Very tasty, tender and satisfying. On the table it looks festive and beautiful.
