Baked Eggplant with Cheese, Tomato and Garlic

Ingredients

  1. Halloumi cheese optional
  2. Eggplant 1 piece
  3. Canned tomato in its own juice 1 piece with juice

Cooking:

Step 1: chop the eggplant.


Cut the cheese into chunky slices. Halloumi is preferable to take, but in principle any cheese that does not melt in the oven, that is, one that can be fried, is suitable.

Rinse the eggplant and cut it into thick slices. Salt and leave on 10-15 minutes, then drain the liquid that has escaped, and dry the eggplants with paper towels.

Step 2: prepare the sauce.


Mash the canned tomato with a fork, add some juice from a jar, chili pepper, black cumin and chopped garlic or wild garlic to it. Mix well. Salt.

Step 3: bake eggplant with cheese, tomatoes and garlic.


Arrange eggplant slices on a baking sheet or on foil, pour them with sauce, put slices of cheese on top and pour them with sauce.
Send the vegetables to bake in preheated until 170 degrees oven on 15-20 minutes until golden brown.

Step 4: serve the baked eggplant with cheese, tomatoes and garlic.
