For the test
- Flour 4 cups
- 4 eggs
- Powdered sugar 1 cup
- Gingerbread spice mix 30 grams
- Soda 1 teaspoon
- Fresh yeast 50 grams
- Butter 120 grams
- Honey 2.5 tablespoons
- Cocoa 1 tablespoon
- Icing sugar 25 grams
- Protein from 1 egg
- Salt 1 pinch
- Gingerbread Egg

Rolling pin, parchment, baking tray, cookie cutter, pastry bag.
Step 1: drown the oil.
Mix the oil with honey and put it on a slow fire or steam bath so that the oil melts and mixes with honey. Cool slightly afterwards.
Step 2: add the yeast.
Add fresh yeast to the butter and honey, crushing them. Mix everything so that the yeast disperses.
Step 3: knead the dough.
Sift the flour directly onto the countertop, add powdered sugar, cocoa, soda, gingerbread spices and eggs to it. And knead, gradually adding to this mixture yeast with honey and melted butter.
Knead the dough with your hands until a homogeneous smooth mass is formed.
Step 4: bake honey gingerbread cookies.
Roll out the finished dough directly on baking parchment. Roll to thickness 4-5 mm. With the help of cookie cutters (it’s better to have New Year’s theme to make it festive), cut the dough into gingerbread cookies.
Lubricate the top of the gingerbread with a beaten egg and send to the preheated until 180 degrees oven on 15 minutes. Bake until golden brown.
Step 5: cover with glaze.
Beat the protein, then add the icing sugar and salt. Add gradually while continuing to whisk. The glaze should be thick enough not to spread.
Fill the resulting glaze in a pastry bag and decorate the finished gingerbread with it.
Step 6: serve the painted honey gingerbread cookies.
I recommend serving honey cakes as quickly as possible after cooking. While they are soft. But, since we decorate them with glaze, we have to wait until it hardens. Gingerbreads are delicious anyway.
