Method

How to make the Focaccia sandwich

Put the milk, oil, sugar and yeast in a large bowl and mix.

Then add the flour and salt and work the mixture until you get a homogeneous mixture.

Pour the dough into a baking tray lined with parchment paper and let it rise for an hour.

Brush the surface of the focaccia with a little milk then bake in a preheated oven at 180 ° C and bake for 25-30 minutes.

Once cooked, let it cool then cut into two parts.

Spread both sides with philadelphia.

Then add salami and rocket.

Cover with the other layer and press lightly on the focaccia.

Here is the recipe for a good focaccia to fill and serve as a snack or aperitif!

Ingrediants:
- 1/2 teaspoon of sugar
- 1/2 cube of fresh brewer's yeast
- 500 gr. of milk
- 500 gr. of manitoba flour
- 2 teaspoons of fine salt

Put the sugar, yeast and 100 g in the jug. of milk and heat 1 min. 37 & # 176 speed 1
Add the flour, the remaining milk and the salt and knead 30 sec. speed 5
Pour the sticky mixture into a pan of about 28 cm. in diameter and let rise covered for about 1 hour.
Brush the focaccia with milk and sprinkle with sesame seeds and a pinch of fine salt.
Bake in a preheated oven at 180 & # 176 for about 40 min. or until golden brown.
Remove from the oven and allow to cool.
Cut and stuffed to taste with tuna sauce, cooked ham, cherry tomatoes, mozzarella, salad ..


How to prepare the sandwich focaccia

Dissolve the yeast in 400 ml of lukewarm milk with sugar (1). Add the seed oil and gradually the flour, mixing with a spoon (2). Also add the salt to make a soft dough. Roll out the dough into a rectangular pan lined with oiled parchment paper (3) and let it rise for an hour or until doubled.

Brush the focaccia with the rest of the milk and add the poppy seeds (4). Bake in a preheated oven at 180 ° C for 25 minutes. Once ready, let it cool and cut it in two and then into many squares (5). Sandwich focaccia

250 g of flour 00
250 g of Manitoba flour
500 g of milk
70 g of oil
10 g of sugar
15 g of salt
a cube of brewer's yeast (or a sachet of freeze-dried yeast)
sesame seeds to taste

Method:
• To prepare the sandwich focaccia you will need a mixer or a food processor as the dough is very soft and you would not be able to knead it easily by hand.

• In the bowl of the planetary mixer, pour the lukewarm milk, oil, sugar, yeast and mix the ingredients for a minute. Add the flour, the salt and let it work for a couple of minutes until you get a homogeneous and very soft dough.

• Pour the sandwich focaccia mixture into a baking tray lined with parchment paper, cover with cling film and let it rise well covered for an hour.

• Once it has risen, finish the sandwich focaccia by adding the sesame seeds on the surface and bake it in a preheated oven at 180 degrees for 25-30 minutes.

• The sandwich focaccia is ready, let it cool before cutting it and then season it as you prefer.


THE TRAMEZZINO THAT BELIEVES ITSELF A FOCACCIA


Ingrediants:
250 grams of Manitoba flour
250 grams of flour 0
90 grams of sourdough (3-4 hours after refreshment)
250 grams of milk
100 grams of water
10 grams of sugar
13 grams of salt
a teaspoon of malt (optional)
30 grams of seed oil
35 grams of lard (or butter)

Furthermore
an egg and two tablespoons of milk, to brush the surface
sesame or various seeds for the surface (optional)


Method:

After refreshing the mother yeast, I wait for it to double (in this period my mother yeast takes 3 hours) and I take the amount I need to make this recipe. I break it into the bowl of the mixer and melt it with the milk, water, malt and sugar. Then I add the two flours and with the hook arm I begin to knead for about 10 minutes, until stringing. Then I add the oil slowly and when the dough has absorbed it all I put the lard to cream. I wait for the lard to be completely absorbed and I also add the salt (in all it will take another 5 minutes).
Of course, if you do not want to use the planetary mixer, you can easily knead by hand with folds in the bowl as in "Highly hydrated bread", following the same timing.



Ingredients for the sandwich focaccia

In the bowl where you are going to knead, dissolve the yeast in the warm milk with the sugar. Let it rest for a minute and you will see that a little froth will form on the surface. Add the oil.

Separately, sift the two flours and mix them with the salt.

Sprinkle in the flours, continuing to knead.

Pour the dough, using a spatula, into a rectangular mold of ten portions (mine was 30x40cm) greased with a little oil or lined with baking paper.

Let it rise at room temperature for at least two hours (it will have to double in volume).

Very gently, grease with a little oil.

Bake in a preheated static oven at 180 ° for about 30-40 minutes. Let cool by covering with a cloth.

Cut the sandwich focaccia

and make it with prisciutto,

scamorza cheese cut into thin slices and rocket.

Close and cut to taste!

Serve your sandwich focaccia, perhaps with a colorful skewer! :)

Ingrediants to fill:
