We prepare 3 bowls, because we will make the tops at the same time. They are all prepared the same, only the ingredient that gives them their specific color differs.
Rub the yolks with the oil, add the sour cream, incorporate the flour previously mixed with the baking powder, grated Parmesan and salt. Beat the egg whites hard with a drop of salt and slowly incorporate with a spatula into the yolk mixture.
We do the same for both the orange top and the green top (I used finely chopped frozen spinach).
Wallpaper the tray (I used the 27X37cm tray) with baking paper and put the three compositions alternately. Put the tray in the preheated oven for about 25-30 minutes until it passes the toothpick test.
When the top is baked, turn the tray over on a kitchen towel, roll it tightly and leave it to cool.
During this time we prepare filling. Mix cream cheese with sour cream, add finely chopped dill (optional) and season with salt and pepper to taste.
Slightly open the cooled countertop, spread the cream cheese, roll back and leave to cool until serving.
First of all, we prepare the top for the roll:
1. Put the egg whites from the 4 eggs separately in a bowl, and put the yolks together with the sugar.
2. First mix the yolks with the sugar in their bowl, until they double in volume and light in color. We also mix the egg whites, then we add them to the yolk mixture, we mix lightly. Add flour and vanilla essence and mix again.
3. Put the composition in a 29x42cm tray lined with oil and greased with flour, or better try with baking paper. Level the dough and spread it on the entire surface of the tray. Bake in a preheated oven at 175 degrees for 10-15 minutes.
4. The top prepared in this way is detached from the baking paper and placed on a damp towel, rolled and held like this until we prepare the cream:
The mascarpone is slightly dissolved with the two tablespoons of strawberry jam and a little vanilla essence. Beat the whipped cream well, mix with the mascarpone and you're done.
Grease the top for the first time with strawberry jam, then spread the cream cheese, roll again and refrigerate for 30 minutes.
The roll with fine cream cheese and strawberry jam is served from the fridge.

The resemblance consists in making the countertop, composed of three differently colored compositions, which were baked individually in the cake, here we mix them and make a single countertop that we roll. Method of preparation:
We need three bowls in which we will make the three dough composites at the same time. The basic ingredients are the same for all three, only the ingredient that gives it and the shade of each one differ. Each is easy to prepare, so they are made in turn without any problems.
For the green dough, separate the eggs, and rub the 2 yolks with 2 tablespoons of oil, 1 tablespoon of sour cream, 2 tablespoons of flour, 1 teaspoon of baking powder, salt and 2 tablespoons of finely chopped (frozen) spinach. Separately, beat the egg whites and incorporate them into the first mixture.
For the orange dough repeat the same procedure as above, only replace the spinach with 2 tablespoons of pepper paste. Tomato paste also works, but the color will not be so vivid.
For the white dough, the same procedure is repeated, but using 2 tablespoons of crushed salted cheese. As the cheese is salted, no more salt is added.
We prepare a baking tray that we line with paper and we also prepare the oven, we start it at 180 degrees C
Doughs: Each dough will be prepared separately, so we need 3 larger bowls and 3 bowls. Separate the egg whites from the yolk. Beat the egg whites with a little salt, and put the yolks in the bowls. Over the yolks, put the cream, the color ingredient, the baking powder and the oil. Homogenize. Beat the egg whites and add the composition of egg yolk, sour cream and other ingredients. We repeat the operation for the other 2 doughs. In the tray already prepared, we put strips of the three doughs alternating colors. Put the tray in the oven until it passes the toothpick test, about 20-30 min. We prepare a towel and when we take the tray out of the oven, we turn it over on the wet towel, with the help of which we will roll the dough. Let it cool.
Filling: We mix the cow's cheese with sour cream, we make it with pasta, salt, paprika or you can add chopped green dill, ham, corn, etc.. We open the roll and spread the cream cheese on the whole surface, roll it again, wrap it in food foil and put it in the fridge until ready to serve.
1. Separate the egg whites and beat them with vinegar and half the amount of sugar, until the egg whites hold very well in the bowl. Separately, beat the yolks with the rest of the sugar, oil, milk and vanilla essence.
2. Incorporate the flour into the yolks, then incorporate the egg whites into the yolks, using light movements, from the bottom up, with a spatula.
3. Pour the dough into a large tray, lined with baking paper. Spread the composition evenly and bake for 25-30 minutes at 160 degrees, or until the roll top is browned.
4. Turn the tray with the rolling pin on another baking sheet, remove the sheet glued to the top and spread your favorite filling.
5. Roll the top and squeeze it well in a baking sheet, like a candy, then put the roll in the fridge for at least 3 hours before serving.
For starters we need 6 bowls, 3 large and 3 small + 3 tablespoons.
We separate the eggs, we put the egg whites in the big bowls, 2 in each bowl, and the yolks in the small bowls, also 2 in each bowl.
Put the tray in the preheated oven for approx. 15-20 minutes, then turn it over on a damp towel and roll it, leave it like this until it cools completely.
Meanwhile, make the filling: mix the cream cheese with the cream until well blended both ingredients (or as the case may be if you want to add dill or salt if the cream cheese is not salty).
We open the roll easily, fill it with the obtained cream and roll it again. We wrap it in plastic wrap and put it in the fridge until ready to serve!

Appetizer Roll with Cream Cheese
Prepare 3 bowls and sift separately, the flour together with the baking powder, according to the quantities corresponding to each colored composition.
Add the black pepper in one and the white pepper in the other two. Stir.
Rub a little of all the yolks with salt in a glass bowl, then incorporate the oil with a whisk.
Add sour cream and beat until smooth.
Divide the composition into 3 equal parts and put the grated cheese in one, the chopped spinach in the other, and the tomato paste, beetroot and paprika in the third. Mix well.
Combine the cheese mixture and separately the beetroot mixture, with the white pepper flour, and the spinach mixture, with the black pepper flour.
Separately, whisk the egg whites with salt and add 1/3 of the amount in each of the 3 colored compositions. Gently wrap with a spatula, turning upside down.
Pour the strips of dough diagonally, alternating colors, in a large stove tray, lined with baking paper.
Place in the preheated oven, for about 20-25 minutes, at 180 degrees or until the top is baked and passes the toothpick test.
Turn the baking tray over a damp towel, remove the baking sheet and roll immediately into a roll, using the towel. Leave to cool.
Mix all ingredients well.
Spread the filling evenly over the entire inner surface of the open top, then roll again.
Optionally, you can put slices of smoked salmon over cream cheese before rolling.
Let cool for a few hours, but best in the evening until morning.
