Beef heart goulash


  1. Beef heart 1 piece
  2. Carrot 1 piece
  3. Garlic 2-3 cloves
  4. Rosemary 1 sprig
  5. Onions 2-3 pieces

Step 1: prepare the ingredients.

Peel onions, garlic and carrots.
Rinse and clear the heart of fat and veins. Cut the peeled meat into large cubes.

Dice the onions and carrots.
Rinse and finely chop the tops.

Step 2: fry the meat.

Pour oil into a cast-iron skillet and heat well.

Put the pieces of heart in a skillet and fry over high heat, stirring frequently.

When the meat changes color, remove the pan from the heat. Let her stand 10 minutes. (Hot iron does not like cold liquids.)

Step 3: add the vegetables.

At the same time, add carrots, onions, garlic, a sprig of rosemary and radish tops to your heart.
After the cast iron has stood at room temperature 10 minutespour in red wine.

Step 4: stew beef goulash.

Put the frying pan back on the fire. Bring to a boil, reduce heat, cover and simmer all together for 1.5-2 hours.

In the middle of cooking, season with salt and pepper, mix and continue to simmer under the lid until the meat is ready.
