Step 1: prepare the ingredients.
Cut zucchini into plump and long slices. Cut the onions into half rings, garlic into slices, and chop the tomatoes into strips.
Step 2: fry zucchini with sun-dried tomatoes.
Heat oil and fry onion with garlic in it until soft. Then add the zucchini and fry, stirring, until they are softer.
Then add the sun-dried tomatoes and, if there is no water left in the zucchini, another 3 tablespoons of boiling water. Salt, pepper and cook everything together for 20 secondsso that the water evaporates and mix well.
Step 3: serve zucchini with sun-dried tomatoes.
Serve hot zucchini with dried tomatoes. Garnish a serving with mozzarella slices. It is very tasty to eat this dish with crackers.
